Assigning a roster or a "shift pattern/rotation" to an employee is done via the employee record.
This can usually be done when creating the employee for the first time however, if this is not defined then, it'll be automatically assigned as 'OPEN'.
To assign this to the employee after its creation, simply locate the employee via 'Live Data & Attendance' or through the settings via the cog in the top-right corner then, 'Employees' and 'Employees'. Once located, simply double-click on the employees name and then assign the appropriate roster via the drop-down menu.
If the employee is due to change their roster or rotation in the coming days/weeks, instead of changing this via the drop-down you'll need to use the 'Change Roster' button to the right of the 'Roster' drop-down:
